Healthy Stir Fry to live by...

This recipe was such a hit in our house! We all loved it and gobbled it all up!





Asparagus and Chicken stir fry,


Ingredients:


2 pounds Chicken Breast Cubed (I just used 4 breast because I had a bunch of people over)


1 tbsp olive oil


dash of salt (I used some of my favorite seasonings such as Basil, Thyme, Nature Seasoning, &Garlic Powder)


2 tbsp soy sauce


2 tbsp minced garlic


6 cups of sliced asparagus


1 cup chicken broth divided


2 tbsp corn starch


1 cup sliced into halves - Cherry Tomatoes


1 tbsp paprika






Directions:


Heat olive oil and then add in cubed chicken breast and stir fry for about 3 minutes then add the soy sauce and paprika and whatever spices you like. Add asparagus and then add 1/2 cup of the broth. Cover for 4 minutes. Meanwhile add cornstarch into the remaining broth then add the tomatoes to the mixture. Pour all that into the skillet. Add garlic and stir over low flames until it's all thick.


I also made some brown rice to go with this dish and the end result was a very tasty dinner!
